This weekend I tried my hand at them, and I’m pretty proud of my attempt.


The whole process is super easy, the only thing is that it’s slightly time-consuming slicing all the veg nice and thin.

They literally burst with flavour and texture.

FullSizeRender Prawn In mine I have

  • Rice Noodles
  • Prawns mixed with Lime Juice
  • Spinach
  • Avocado
  • Red Peppers
  • Scallions
  • Mango
  • Red Chilli
  • Cucumber

I looked through Pinterest to see how best to assemble these.

Firstly soak your rice paper in luke warm water until the soften.

Lying flat add all your veg at the edge of the paper in a neat pile.

Fold over once and lay your prawns onto of the veg.

Fold in the sides and roll and roll until you’ve a nice little bundle created!

I served mine with a handmade dipping sauce- equal amounts of soy sauce and sweet chilli, a dollop of peanut butter, splash of fish sauce and a squeeze of half a lime!
