Lunch this week: Stack Salad Box

img_1901In an attempt to Save Money, Eat Healthy and added bonus of Weight Loss, I’ve made out a weekly shopping plan and whatever I buy on a Sunday night has to do me until the following Sunday..It gets pretty bleak come Friday morning but it’s definitely helping on the money front.

This week’s lunch is a Salad Box- layers of flavours, quick to make, anything can be added/substituted/removed-

First I throw in Spinach/Rocket/Basil miximg_1896

Next some couscous, peppers, avocado, fresh chilliimg_1898

Turkey, dollop of Humus and splash of Frank’s HotSauce  img_1899 (I fried turkey in paprika, salt and pepper on a pan lubed up with Coconut Oil of course.)
